Tom D’Ambrosio started out whipping up gourmet burgers for patrons across Phoenix, AZ, but always wanted to expand his culinary repertoire into new, challenging territories. He did just that with a brand new food truck, Modern Tortilla. Here, Tom and his classically trained team whip up a bounty of Mexican eats that incorporate a little bit of Southwestern flavor. 

While most taco trucks have options for stuffings, few offer the sheer magnitude of choices that you’ll find here. There are 21 types of toppings, 4 types of meat, and 3 types of tortilla. This provides a pretty much endless array of options for mixing and matching. You can, say, grab some slow braised pork smothered in a robust achiote marinade served up on a corn tortilla. Or, try a burrito made with a cilantro-lime tortilla stuffed with lime-flavored cod for a double whammy of citrusy flavor. Inspired?
